|VINIFICATION AND AGING:
Vinification: MILLESIMATO grapes are carefully selected among the ripest grapes with the best exposure. After immediate destemming, the grapes are gently pressed into a must. Fermentation at a controlled temperature lasts about two weeks. The wine is then allowed to rest in an environment conducive to creating a spumante with character. The base is chosen after careful tastings and put in a hermetically sealed autoclave for approximately 45 days to obtain the desired pressure and residual sugar.
Refining: Refinement in the bottle for another 30 days before tasting
PERLAGE: Extremely small bubbles, persistent and vivacious.
CHROMATIC RANGE: Brilliant, straw yellow.
BOUQUET: Inebriating. Flowing, dominant scents of mature fruit, peach, apricot, and exotic fruit. Framed by delicate floral notes.
TASTE: Well-balanced intensity and pleasant softness.
